Beef With Arugula - {Straccetti Con La Rughetta}

Recipe Ingredients

1 1/2 lbs 681g / 24ozLean sirloin
  Salt - to taste
  Freshly-ground black pepper - to taste
1/4 cup 59mlExtra virgin olive oil
  = (or 4 tbspns butter)
1   Arugula bunch - leaves only (large)

Recipe Instructions

Cut the meat into 1/4-inch by 1/4-inch by 2-inch long strips. Sprinkle with salt and pepper. Heat the oil or butter in a large skillet, add the meat, and brown quickly on all sides over high heat, about 5 minutes.

Chop the arugula if the leaves are large; leave whole if small. Add the arugula to the skillet, turn off the heat, toss with the straccetti and serve immediately.

This recipe yields 4 servings.
