Beef With Arugula - {Straccetti Con La Rughetta} Recipe - Cooking Index

1 | Arugula bunch - leaves only (large) |
Cut the meat into 1/4-inch by 1/4-inch by 2-inch long strips. Sprinkle with salt and pepper. Heat the oil or butter in a large skillet, add the meat, and brown quickly on all sides over high heat, about 5 minutes.
Chop the arugula if the leaves are large; leave whole if small. Add the arugula to the skillet, turn off the heat, toss with the straccetti and serve immediately.
